Check this out: The cuisine of Northeastern China refers to the cuisines of Jilin, Liaoning and Heilongjiang provinces, and it has been well known since ancient times. It originated from the Jin Dynasty during the early 12th century. Due to the cold weather in the region, people are accustomed to eating very hot food, and so cooking techniques such as casserole, hot-pot, and roasting were developed. In the 1930′s, the last emperor Fuyi established his Manchurian Imperial court in Changchun and Changchun became a political center of the time. Other than the Imperial chefs from the Forbidden City in Peking, many famous chefs from Shandong went to work in the imperial kitchen. They combined the Shandong and imperial cuisines with the local Jilin folk cuisine and developed today’s Northeastern Chinese cuisine. The main body of Northeastern cuisine is the local folk cuisine using casserole, stir-fry, qiang, and marinating techniques. It also includes traditional techniques used in the imperial court. Northeastern cuisine utilizes the native crops of its mountainous land to its advantage, and is famed for its wild game dishes. Knife skills, shovel skills, command of fire and fire temperature are important in its Chefs’ training. Question: Why is Leah still on Top Chef?
OMG……WHY IS LEAH STILL ON THIS SHOW!! She gives up at some point on every show so far. She reminds me of some Oxy addict who only comes out of their room after the sun goes down. That woman (not even giving her the title of “chef”) is extremely depressed and needs to crawl into the whole she crawled out of. She needed to be sent home so long ago………can someone please cpsogn this.

Leah is talentless! I am not a trained chef and I beleive that I can cook better than her. Her enthusiasm stinks. Not to mention she’s a skank for hooking up on the show. And she’s ugly. But shes a nice person :p

Beyond Reality – Top Chef NYC Recap – 2/04/09 Last week Jeff was sent home – Top 6 Quickfire challenge with guest judge Eric Ripert. 3 round fish fileting tournament. 1st round – Clean & butterfly 2 sardines. Jamie & Carla were eliminated. 2nd round – clean an Artic Char. Leah & Fabio were eliminated. 3rd round – Hosea vs Stefan – clean a freshly killed eel. Stefan wins an advantage (no immunity) Lunch at Le Bernardin for the chefs in the private dining room. Elimination challenge – they each must recreate one of the dishes at the luncheon. Stefan chose the lobster dish because he had the advantage from the quickfire. They drew knives for the remaining dishes. Carla – escolar, Hosea – monkfish, Leah – mahi mahi, Fabio – red snapper, Jamie – black bass. Eric came & critiqued the dishes before they actually had to serve them. Top – Stefan, Fabio & Carla. Stefan won & got Eric’s new cookbook “On the Line” & an invitation to be his guest for a week then fly to the food & wine festival with him. Bottom – Hosea, Leah & Jamie. Jamie was eliminated. Next week – Fabio cuts himself.
